These are the cuts that you will get with 1/4 of a steer.  Please remember that the quantity and size are determined by the size of the steer.  Steaks are packaged individually and the roasts are usually 3-4 lbs each.

• Short Ribs
• 1/2 Brisket
• Soup Bones
• Dog/Beef Bones
• Delmonico Steaks
• Top Round Roast
• Eye Round Roast
• Sirlion Tip Roast
• Bottom Round Steaks
• Ground Beef - 1lb Packages

You then have a choice on the steaks you would like.

Choice A:  Porterhouse, T-Bone, and Sirloin Steaks

Choice B: Filet, Sirloin Strip, and NY Strip
